RECIPE OF THE WEEK...
HOMEMADE WHOLE GRAIN PANCACKES WITH FRUIT

INGREDIENTS
3/4 CUP HODGSON MILL WHOLE WHEAT BUTTERMILK PANCACKE MIX
1/2 CUP ALMOND MILK
1 ORGANIC EGG, OR 1/4 CUP EGG BEATERS
1 TBSP. ORGANIC OLIVE OIL
1/4-1/2 CUP ORGANIC BLUEBERRIES
2-3 ORGANIC YELLOW PEACHES
ORGANIC CINNAMON TO TASTE
ORGANIC REAL BUTTER TO TASTE
3/4-1 CUP LITE SYRUP/ORGANIC MAPLE SYRUP
8 TBSP. LIGHT WHIPPED TOPPING


DIRECTIONS:
PREHEAT GRIDDLE TO 360 DEGREES. IN LARGE BOWL ADD PANCACKE MIX, MILK, EGG, AND OLIVE OIL.  STIR UNTIL BLENDED AND SMOOTH.  LET STAND 5 MINUTES.  POUR ONTO PREHEATED GRIDDLE, ADD 3-4 BLUEBERRIES PER PANCACKE AND LIGHTLY SPRINKLE WITH CINNAMON.  COOK ON ONE SIDE UNTIL GOLDEN BROWN THEN FLIP AND COOK OTHER SIDE UNTIL GOLDEN BROWN.  FEEL FREE TO SPRINKLE A LITTLE CINNAMON ON THE OTHER SIDE AS WELL.  ADD A THIN LAYER OF BUTTER TO TASTE, LIGHTLY DRIZZLE WITH SYRUP, ADD WHIPPED TOPPING AND FINISH WITH BLUEBERRIES.  PLACE SLICED PEACHES ON THE SIDE.  
MAKES 6-8 PANCACKES (3-4 SERVINGS)

These are all also excellent sources of fiber, remember to get 25-30 grams of fiber per day through a balanced diet*
